Ingredients and quantities:

  • Filet mignon of pig : 200 g
  • Peanut oil : 8 g
  • Frozen minced shallots : 5 g
  • Frozen minced garlic : 1 g
  • Fine salt : 3 g
  • Ground black pepper : 2 mg
  • eXOse old barrel : 30 g

Method

  1. Slice thinly the filet mignon, season with the others ingredients.
  2. Churn slowly for 3 to 5 minutes with a whisk or with a churn.
  3. Heat up a pan without fats. Sear the filet mignon in the pan.
  4. Leave it to cook over low heat for 4-5 minutes.
